Simple Strawberry Sauce (with Coconut Milk Ice Cream)

A dessert that’s easy to make and easy to love!  You can serve it on its own or on top of your favorite ice cream.  I like to use coconut milk ice cream because it keeps it light.  My favorite part is the last bite when all the flavors from the sauce mix with the melted ice cream….mmm…

Makes 4-5 servings

1 pint fresh strawberries,
       thinly sliced
1 banana, thinly sliced
½ teaspoon orange zest 
¼ cup freshly squeezed orange juice  
1 tablespoon chopped mint leaves
1 tablespoon honey
1 pint Vanilla Coconut Milk
       Ice Cream, optional
       (I like SODelicious “Vanilla Bean”)

               

     
In a large bowl mix strawberry slices, banana slices, orange zest, orange juice, mint, and honey.  Let it sit at room temperature for 2-3 minutes.  Meanwhile, place 1-2 scoops of coconut ice cream in each bowl.  Spoon ½ cup of fruit mixture on top of ice cream in each bowl.  Grab a spoon and dig in!

*I love to serve my Simple Strawberry Sauce on its own with a cup of chamomile tea as a quick and healthy weeknight dessert. 

*Looking for a zing?  Replace orange with lemon.  Yummy and fresh!
