There are some favorite recipes that just kind of sneak up on you. You know what I mean, those dishes that you make again and again without thinking about measurements or instructions but they seem to be one of the rotating favorites you can count on. That's what I call a "Go-To" recipe. And that is exactly how my Go-To Chicken Salad came to be.
In my house, chicken salad was usually on the dinner menu on a very busy day when I didn't feel like getting a lot of pots dirty and I didn't feel like making a mess on the stove (yes, I have those days too ). I especially loved making a big batch of it so it would be enough for dinner that night and lunch the next day.
But I never really considered it a recipe. That is, until one Monday morning. Patrick and I had just finished our breakfast and I asked if he had any dinner requests for the week ahead. (Of course, I have now learned to ask that question when he has an empty stomach because he never seems to think of anything when he's full) But that morning he said, "Well, I really like your chicken salad." So naturally, I....
PANICKED! Inside I'm thinking, "what do you mean, my chicken salad." I never remembered what I put in it. I just made it how I liked it. I just added things until it tasted good. In one moment, a quick and easy dinner that I had never given much attention to became Patrick's dinner request? But you know what, he did have a point- it was good. And come to think of it, I secretly looked forward to chicken salad leftovers in the fridge. Hmmm... maybe it was time to write it down.
