The other day I was rushing around checking off things on my to-do list, when I realized something was very, very wrong... I was STARVING! And let me tell you, I cannot be productive when I am hungry. Just ask my husband. So I did what any other normal, starving person would do. I went straight to the fridge. There I stood, holding the fridge door open, just staring and racking my brain for ideas.
What could I make that was quick? Really quick.
First I found almond butter. It's one of my staples. Me and almond butter? We go way back. Almond butter and strawberry jelly sandwiches were always in my lunch bag in high school. Okay, so I'm thinking a sandwich. I knew I had gluten-free bread. Duh. I always have a loaf of this brand in the freezer.
Almond butter? Check.
Gluten-Free Bread? Check.
But something was missing... something fresh...and slightly sweet...
Strawberries!! They were staring me right in the face! This time of year, I always have a pint in my fridge. They make for a great sweet snack or I love to make big batches of Homemade Strawberry Jam. But this day I decided to add them to my almond butter sandwich. Then I topped it off with a small drizzle of honey. Brilliant! It was fresh and just slightly sweet. It was the perfect, quick meal that I needed.
So with my tummy full and my sweet tooth satisfied, I got back to work and checked everything off my to-do list. Okay, okay. Maybe not everything. A girl can dream, can't she?
[Gluten-Free] Almond Butter and Strawberry Sandwich
This
recipe is fast and super tasty! The
protein in the almond butter keeps you full while the honey and strawberries
satisfy your sweet tooth in a healthy way. Sometimes I cut the recipe in
half and make it for a healthy afternoon snack!
Makes 1 sandwich
2 tablespoons almond butter
3-4 strawberries, hulled and sliced
1 teaspoon honey
Spread one tablespoon of almond butter on each slice
of bread. Top one piece of bread with the strawberry slices. Drizzle honey on top of the strawberries. Place the other slice of bead on
top of the strawberries. Enjoy!
