Gruyere Garlic Toasts

Gruyere Garlic Toasts
These little things pack big flavor!  I simply season gluten free bread slices with olive oil, good garlic powder, Italian seasoning, and a little salt.  Topping it with gooey Gruyere cheese takes it to a whole new level.  They’re perfect with a bowl of soup or just on their own with a glass of wine.  Yum!

Makes 12-13 toasts

½ of a gluten free baguette*,
       cut ¼ inch slices (about 12-13 slices)
¼ cup freshly grated Gruyere cheese
2 tablespoons extra virgin olive oil
¾ teaspoon garlic powder
¾ teaspoon Italian seasoning
1/8 teaspoon salt

            Preheat oven to 350 degrees.
Line a baking sheet with parchment paper.  Place baguette slices in a single layer onto the baking sheet.  Drizzle the baguette slices with olive oil.  Sprinkle evenly with garlic powder, Italian seasoning and salt.  Then, top each slice with a teaspoon of freshly grated Gruyere cheese.
Bake for 10-12 minutes until toasted and the cheese has melted.  Serve with my Hearty Winter Squash Soup or my Hearty Butternut Squash Soup and sink back in a comfy chair.  Enjoy!

*I use Against the Grain Gourmet gluten free baguettes.  You can find them in the freezer section of many local health food stores.  Make sure to thaw them out before baking, so they bake evenlyIf you can’t find baguettes, slices of your favorite gluten free bread will work just fine.  Just keep an eye on them in oven.  Some breads bake faster than others.

*Not feeling cheesy?  I make these toasts all the time without the Gruyere cheese.  What you’re left with are fantastic pieces of garlic toast that are quick and simple to make!
