Sweet Pursuit



Chocolate and Coconut.  It's a match made in sugar heaven.  My mom makes chocolate coconut bars... oh. my. goodness.  They only show up at the dessert table for special occasions, but when they do, my family goes crazy!  Gooey chocolate with toasted coconut and crunchy walnuts all on a perfect graham cracker crust.  Trust me, you would go crazy too.


Oh you want the recipe?  Yea, me too.  I don't have it.  Don't worry, I'm not bitter about it or anything.  I think I have asked my mom for the recipe about 30 times now and it's different every time.  It's like the time when she was "teaching" me how to make her perfect white rice.  It's the most amazing rice you will ever taste.  "Oh honey it's easy," she said.  Oh boy, I knew I was in trouble.


After following her exact directions, I ended up with perfectly awful rice.  When I called her to tell her the bad news she said, "You didn't cover it with a lid?"  Minor detail she left out of the recipe.


So, while I am working on getting this "knock your socks off" coconut bar recipe, at least I can enjoy the classic flavors of it.  So here's my super easy, perfect for a crowd, but watch out they go fast, Chocolate Coconut Fudge recipe.  And don't worry, I put all the instructions in there.
