Iced Coconut Café Latte

Iced Coconut Café Latte
A little pick-me-up that doesn't leave you dehydrated! You can make this in the morning and keep it in the fridge at work in anticipation of that afternoon cup.  Or use decaf coffee and serve it at the end of a summer dinner party.
Makes 1 serving

2 ounces* of hot freshly brewed espresso (1/4 cup)
4 teaspoons of coconut sugar (blonde)
½ cup coconut water
2 tablespoons whole milk

                Pour espresso into a heat proof cup or bowl.  Add sugar and mix well until sugar is dissolved.  Add coconut water and milk.  Serve chilled over ice.

*about a double shot of espresso
