[Gluten-Free] Tri-color Caprese Salad

It's almost the end of summer. I still can't believe it! Where did July go? But don't worry, there's still time to enjoy the late summer harvest, including tomatoes.



I like to serve them very simply in a beautiful Caprese Salad.  But of course, I like to make it extra special with a variety of colors and flavors in my Tri-color Caprese Salad.

The classic combination of juicy, bright tomatoes, with the slight saltiness of sliced mozzarella, the fresh taste of basil, and the drizzle of some beautiful aged balsamic vinegar is perfect for an appetizer or a salad.


Try using different color tomatoes and alternating them to make a gorgeous display. Serve with a nice glass of wine and enjoy.

Sometimes its the simple things in life....

[Gluten-Free] Tri-color Caprese Salad


1 medium red tomato, sliced
1 medium green tomato, sliced
1 medium yellow tomato, sliced
16 oz. fresh mozzarella cheese, sliced
20 basil leaves
¼ cup good aged balsamic vinegar
salt
pepper

              


Place a slice of cheese on top of every tomato slice. On top of each mozzarella slice, place 1 basil leaf. Then on your serving platter, lay down each tomato tower alternating between the colors, red, then green, then yellow.  Drizzle balsamic vinegar on top. Sprinkle with salt and pepper. Enjoy!

*The more aged a vinegar is the more intense flavor it will have. A little goes a long way!
