Chicken Sausage Stir Fry

Get the most out of your chicken sausage by using the brown bits left behind on the bottom of the pan… that’s where the flavor is!  I love to serve this with a simple starch like my Easy Tomato Basil Polenta or a bowl of quick-cooking quinoa for a fast and tasty weeknight meal.
 
Makes 4 servings

4 fully cooked Italian chicken sausages 
       (gluten free), cut in 1/4 inch slices 
       (I like “Bilinski’s" brand)
1 yellow bell pepper, thinly sliced
½ medium red onion, thinly sliced
¼ cup white wine or chicken broth
4 sundried tomatoes,* chopped 
2 cloves garlic, minced
2 tablespoons extra virgin olive oil, separated
¼ teaspoon salt
¼ teaspoon pepper

                

              Heat 1 tablespoon extra virgin olive oil in a large sauté pan over medium-high heat.  Add the sausage slices and spread them out evenly in the pan.  Cook until browned on both sides, 4-5 minutes**.  Transfer browned sausage to a plate.  Turn the heat down to medium-low and add the remaining 1 tablespoon of extra virgin olive oil.  Add bell pepper and onion slices and cook for 1 minute.  Then, pour wine or chicken broth into the pan and use a spatula to loosen the brown bits left behind from the sausage.  Stir to combine.  Cook the vegetables for 5-6 minutes or until just softened.  Add sundried tomatoes, garlic, salt, and pepper and cook for 2 minutes.  Then, return the sausage to the pan.  Cook for 1-2 minutes or until the sausage is heated through.  Serve hot over your favorite starch.  Yum!

*You can either buy sundried tomatoes in oil or in a bag.  If you have bagged sundried tomatoes, soak them in hot water for about 10 minutes to rehydrate them before chopping.

**If you are anything like me, you love to stir the pot…often!  Try to resist the temptation to over-stir the sausage.  Let the sausage cook for 2 minutes without stirring to kick start the browning process.  The brown bits that stick to the pan are what make this stir fry so yummy.  If you are afraid the sausage is going to burn, stir quickly and turn down the heat.
