Honey Nutty Granola
I always loved the idea of making your own granola because you can pick whatever flavors you want.  For me, I love my granola crunchy, nutty, and just slightly sweet.  Whether it’s in a cereal bowl with cold almond milk or on top of a Greek yogurt parfait, I just love this stuff!

Makes 4 ½ cups  
 
2 cups gluten free oats
¾ cup walnuts, coarsely chopped
¼ cup roasted sunflower seeds
2 tablespoons ground flax seeds
1 egg white
¼ teaspoon salt
1/3 cup honey
2 tablespoons extra virgin olive oil
2 teaspoons vanilla extract
2 tablespoons chopped dried 
       apricots (4-5 apricots)
2 tablespoons chopped dried figs 
       (5-6 figs)
2 tablespoons dried cranberries


            Preheat the oven to 350 degrees.
In a large bowl, mix together gluten free oats, walnuts, sunflower seeds and ground flax seeds. In a medium bowl, whisk together the egg white and salt until frothy.  Then, whisk in honey, olive oil, and vanilla.  Add honey mixture to oat mixture and mix until everything is coated with the honey mixture.  Then add apricots, figs, and cranberries.  Mix until all combined.
Pour granola mixture onto a baking sheet lined with parchment paper.  Bake for 17 minutes.  Remove pan from oven and toss granola mixture with a spatula.  Place back in the oven for 7-9 minutes until golden brown and toasted.  Remove from baking sheet and let it cool before serving (the granola will harden as it cools).
Keep in an airtight container for 2-3 days.  Enjoy!



Lauren Marie’s Tips:
*I love using this granola as the crunchy element in an easy Greek yogurt parfait.  Drop a tablespoon of granola at the bottom of your parfait cup add about 1/3 cup yogurt and top with a 2 teaspoons of your favorite jam.  Continue the pattern until your cup is full.  Top with granola and a couple pieces of fresh fruit.  Yum!
