Anything But Boring Chicken



Last Thursday, I was talking on the phone to Patrick as he was driving home from work. He asked the simple question, "So... what are you thinking for dinner?"  It's a question that he asks a lot, usually when he is hungry.

But last Thursday was one of the craziest days I have had in a long time.  Lots of running around.  Luckily, I had a game plan.  So I quickly reply, "Chicken."  And do you know what I heard on the other end of the phone? 
SILENCE.  



What is it about chicken that automatically makes us think "bor-ing?"  I think it's because a lot of us have had our fair share of overcooked and under-seasoned chicken.  But I'm going to let you in on a little secret: perfectly moist and perfectly seasoned chicken is quite easy.  I use my Go-To Oven Roasted Chicken Breasts recipe all the time, like last Thursday.


I had anticipated a crazy day so I prepped the chicken breasts that morning.  When I came home, I took them out of the fridge, preheated the oven, and less than an hour later I had dinner on the table.  I served my chicken over a bed of gluten free angel hair pasta   (I recommend this brand) with garlic, olive oil, red pepper flakes, and sauteed broccoli.  All topped with a little Parmesan cheese. 



And do you know what Patrick said?  "When you said chicken for dinner, I forgot that you make chicken like this."  You know what?  I think I'll keep him :)
