Chocolate Peanut Butter Rice Treats
Sticky, gooey treats that require no cooking! These little
things are sweet, crunchy and really easy to make. Chocolate peanut butter with crispy rice
mixed with honey and a touch of vanilla. They are great to bring to a party or for a
quiet evening at home. Or both!
Makes 20-30 treats
¾ cup chocolate peanut butter*
½ cup honey
1 teaspoon vanilla
5 cups brown rice cereal (I like “Erewhon” Crispy Brown
Rice)
½ cup chocolate chips
In a
large bowl, whisk together chocolate peanut butter, honey, and vanilla until
smooth. Using a rubber spatula gently fold in cereal. Then fold in chocolate chips until everything
is well incorporated.
With
damp hands, scoop a tablespoon of the mixture and carefully roll into balls,
trying to compact the balls as best you can.
(This can be a sticky job, just make sure to keep your hands damp and
the mixture will be easier to work with).
Place balls on a parchment lined baking sheet or platter. Place in fridge for 1 hour, or until firm (or in the freezer for 20-25 minutes). Keep treats in an airtight container in the fridge for 2-3 days. Serve cold.
*There are a few different chocolate peanut butter” brands
that are labeled gluten free. “Justin’s”
and “Peanut Butter & Co.” are two good brands. If you have a peanut allergy, substitute your
favorite chocolate nut butter (hazelnut, almond, etc).

*If they start to break apart just place them back in the fridge
or freezer until they firm up.
*I love using honey in my recipes. I like the texture and floral sweetness it can bring to a dish. But I do NOT like it when the honey sticks to my measuring cups. So, I always use my oil trick. Before measuring out the honey, rub the inside of the measuring cup or spoon with a little oil (coconut oil, olive oil, etc.). You won't believe how easy the honey comes out!
